Considered the "Pioneer of the Peruvian food revolution in Britain", Martin Morales left his former career as DJ, founding member of Apple iTunes Europe and CEO of Disney Music, to dedicate his life to his love for Peruvian food. Having cooked since the age of 10, Morales pursued his passion through creating Ceviche from a series of successful pop-up restaurants and supper clubs in 2012. It was this creation that kickstarted the Peruvian restaurant craze, quickly strengthened by the opening of his second restaurant Andina in 2013, with a menu that paid homage to the healthy superfoods of the Peruvian Andes. Born in the capital of Peru to an Andean mother, he brings together influences from every aspect of Peruvian food; coastal ceviches, to dishes made with Andean superfoods, as well as new creations inspired by Peruvian Amazonian ingredients and authentic recipes.
