Description
Learn how to transform wilting salad leaves into fragrant marinades and chutneys, make stuffed parathas with left over root veg, use withering grapes in conjunction with tomatoes in curries, make Keralan style rassams and fruit based lassis. Oh and kerb food waste while you’re at it.
Nikita aka Spice Monkey will bring you a one of a kind workshop celebrating delicious seasonal Indian food. Salad and fresh veg make up a huge proportion of the food we throw away and a shocking two thirds of bagged salad is never eaten. But it doesn't have to be this way...
This class will help you to think outside the bag, covering a host of recipes and you’ll learn top tips for cooking and storing the most heavily wasted summer items. The best bit? You’ll sit down to eat everything you’ve made in a beautiful relaxed setting.
Meet the chef
Spice Monkey is an Indian cookery school based in North London. Headed up by Nikita Gulhane, a course with Spice Monkey will give you the tools and confidence to create your own great tasting dishes time after time. Nik has a wealth of experience gathered over many years having worked with some of the biggest names in food publishing and TV. He worked with Madhur Jaffrey on her series 'Curry Nation', and to gather and develop the recipes for the book of the series published by Ebury. He was also the food stylist for Phaidon on their massive tribute to Indian cuisine 'India Cookbook'.
Nikita's food background encompasses political and journalistic interests, having worked on food policy issues for DEFRA, and making documentaries and reporting about food for BBC Radio, including Radio 4’s ‘The Food Programme’. He also spent many years working in Bistros and French restaurants as well as feeding some of the biggest names in rock and pop, from BB King to The Pogues, The Ramones to Simply Red.
"Food has been the narrative running through my life and career. But it’s Indian food I always return to. Inspired by my mother, Spice Monkey is all about good home cooking, the way I learned from her".
New Leaf cooking classes are funded by North London Waste Authority and brought to you by Hubbub.
