    Nishma Shah of award-winning vegan educators & caterers Shambhu's will teach you how to make a healthy and delicious South Indian dosa meal, which happens to be gluten-free and will provide a mix of highly nutritious and delicious pulses in your diet.

    This live interactive class will include:

    • How to make a mung bean savoury pancake
    • How to make the classic potato-based masala to go with the savoury pancake (like a masala dosa)
    • How to make two delicious accompaniments: coconut and tomato & onion chutneys

    About Nishma Shah
    Nishma Shah is founder and chef of award-winning ethically-conscious London-based plant-based food business, Shambhu’s. She provides plant-based catering and teaches plant-based cookery in a number of settings, drawing from her Indian and Kenyan culinary roots with the aim of showing how delicious, varied and nutritious plant-based food can be. She has been a masterclass teacher for Made In Hackney for over 5 years and has also taught plant-based cookery for many other organisations, both in the UK and abroad.

    INGREDIENTS LIST

    ONION AND TOMATO CHUTNEY

    • 200 grams onions (appx 2)
    • 4 tablespoons tomato passata
    • 5 curry leaves
    • 1 tablespoon oil
    • ½ teaspoon mustard seeds
    • ½ teaspoon chilli flakes
    • Salt to taste

    COCONUT CHUTNEY

    • 100 grams desiccated coconut
    • 200 millilitres coconut water
    • 1 green chilli
    • 2 curry leaves (optional)
    • ¼ teaspoon cumin powder
    • 6 sprigs fresh coriander (leaves & stalks together)
    • 2 tablespoons lemon/lime juice (~½ lime/lemon)
    • Salt to taste

    POTATO MASALA (DOSA FILLING)

    • 100 grams onions
    • 300 grams red potatoes
    • 1 tablespoon lemon/lime juice
    • 1 tablespoon cashew nuts
    • Salt to taste
    • 5 curry leaves
    • ½ teaspoon turmeric
    • 1 tablespoon oil (rapeseed or sunflower)
    • 3 cinnamon shards, ~1-inch long (e.g. cut from a whole cinnamon stick)
    • 6 cloves
    • 1 green chilli / 1 teaspoon chilli flakes
    • ½ teaspoon cumin seeds
    • ¼ teaspoon mustard seeds
    • ½ teaspoon aesofetida (optional)
    • 4 sprigs fresh coriander (leaves & stalks together) (for decoration)

    SPLIT MUNG BEAN DOSA

    • 100 grams spilt yellow mung bean, husk removed 
    • 5 grams split urid beans, husk removed (optional)
    • 250 millilitres water for soaking
    • Juice from ¼ lime/lemon
    • ¼ teaspoon per pancake of fruit salt or bi-carbonate soda (optional)
    • ¼ thumb size piece fresh ginger
    • ¼ teaspoon of turmeric 
    • A few spinach leaves
    • ½ green chilli
    • A few sprigs coriander 
    • Salt to taste
    • Oil to grease the pan
    • Half an onion with salt, to season the pan
