Join Jay Brave, vegan activist, broadcaster, consultant and talented cook, to learn how to make delicious rainbow vegan patties! Pattie shops have been powering Londoners for decades but now you can learn to make these tasty classic snacks yourself at home. (Don't forget to still support the pattie shops though!)
You'll learn:
- How to make a tasty, veg packed filling with lots of ideas for ingredients swaps
- How to use Caribbean seasonings to spice up your filling
- How to create rainbow pastry using natural foods to colour
- How to shape and fold your pattie neatly
About Jay
Jay Brave is a vegan activist, broadcaster and consultant, as well as as talented cook. He has been a long time facilitator of cookery classes with Made In Hackney ('Wraps & Raps') and has cooked for the Mayor of Hackney alongside Anna Jones and Melissa Hemsley. He has also advised the Metropolitan Police on nutritional habit-forming as well as working with vegan companies such as The Green Grill and Eat Some Ting on recipe development.

INGREDIENTS LIST
Crust:
- 250g or 2 cups/3 Cups White Spelt Flour (or plain white flour)
- 1 tsp Sea Salt
- 2 tsp Achiote or Turmeric Powder
- 1/4 cup Grapeseed or Rapeseed Oil
- 1 Cup Plant Milk
Make other colours of crust by using: Beetroot powder, Spinach, Red Lentil, Paprika Powder
Filling:
(These ingredients do not have to be exact, you could always eat the filling on its own or with rice, grain etc)
- 175g Diced Mushrooms
- 1/2 Green, Yellow, Red and Orange Bell Peppers (or purchase 2 different bell peppers and use whole)
- 1 Red or White Onion
- 1 Spring onion (optional)
- 2 Diced Roma/Plum Tomatoes
- 1 Bay Leaf
- 2 Sprigs of Thyme (or a teaspoon of dried thyme)
- 1 tsp of Achiote or Turmeric Powder
- Seasoning of your choice (You can add pimento, paprika, onion powder, cayenne pepper, mixed herbs, all spice, curry powder, all purpose seasoning or a bit of all of the above!)
EQUIPMENT LIST
- Mixing bowl or food processor
- Knife
- Chopping board
- Fork
- Large frying pan
- 16cm/6in round plate or saucer to use to cut around
- Pastry brush if you have one (otherwise you can use your fingers)
- Wooden spoon
- Rolling pin (or you could use an empty glass bottle instead)
- Baking/parchment paper
- Oven
