    Melissa will invite you into her kitchen to make a traditional yet modern plant-based Caribbean stew with ‘spinners’ and some delicious veggie side dishes, with lashings of culinary history and insight on food from the islands on this mini virtual food tour. You'll discover how quick and easy Jamaican cuisine can be, without skimping on flavour!


    Melissa Saint Hill is a registered Associate Nutritionist with the Association for Nutrition (AfN) and Clinical Research Scientist, with interests in type 2 diabetes, cardiometabolic health and the gut microbiome. Melissa is passionate about teaching and inspiring people to cook and eat healthily, without compromising on taste.

    INGREDIENTS LIST

    •  Rice or grain of choice to serve with the stew – (we will be cooking white basmati - ~1.5 - 2 cups)
    • 1 - 2 tbsp olive oil
    • 1 large yellow onion, chopped into medium chunks
    • 2 large cloves garlic, minced
    • 2- 3 Sprigs of fresh thyme
    • 1x 400g red kidney beans
    • 1x 400ml can of coconut milk
    • 2 - 3 stalks scallions (spring onions), sliced
    • 1 scotch bonnet pepper (if you cannot get this then cayenne pepper or ground chilli will do), finely chopped
    • 4-5 pimento (all spice) berries (or ground as a sub)
    • 1x stock cube
    • Salt, dried mixed herbs
    • (1 - 2 tbsp cornflour, optional)
    • some additional items: 1 large carrot, 1 bell pepper (any colour you can get), 1 celery stalk 

    INGREDIENTS FOR SPINNERS

    • 1/2 - 1 cup flour – whatever you have or can get
    • 1/4 - 1/3 cup cold water
    • Pinch of salt and dried mixed herbs

    EQUIPMENT LIST

    • Sieve to wash the rice
    • One small-medium saucepan for the rice
    • Fork for rice
    • Teaspoon, tablespoon and cup measures
    • Large pot, dutch pot or skillet with cover
    • Wooden utensils - spoon
    • A couple of teaspoons
    • Small bowl (if we use the cornflour) - if not need it for dumplings anyway
    • Can opener
    • Chopping board
    • Large knife
