Chef Robert Owen Brown presents a day dedicated to making amazing pork dishes from the best cuts, which you'll be butchering yourself with expert assistance from one of the best butchers in Greater Manchester!
The course runs for 6 hours from 10am to 4pm. Students are asked to arrive on site for 9:30am. Complementary morning refreshments will be served and chef's jackets will be provided which you are welcome to keep.
The day will begin with groups splitting into pairs as you break down a half pig into it's cuts with assistance from Rob, followed by prep of all the vegetables you'll be using during the day.
You'll learn to prepare six dishes throughout the day - some to eat immediately and some to take home with you to share with family and friends.
All leftover pork will be shared out equally amongst the students at the end of the class for you to practice with at home. Don't expect to have to go shopping for the next couple of weeks.
As Cook:Manchester is a working kitchen, you'll be expected to work to a chef's standards of discipline and food hygiene. A full briefing will be given before the session begins.
The Cook:Manchester Masterclass sessions are a series of cooking lessons developed with hard-working chefs from around the UK, each one centred around the experience of creating dishes around a particular set of ingredients or skills.
Each class is specifically designed to be accessible to all skill levels, but involve a level of difficulty and attention to detail that will tax even the most experienced students. With a focus on every dish being made from scratch including taking your own cuts from whole animals you'll get a start to finish experience unavailable anywhere else. Make no mistake, The Cook:Manchester Masterclass will be one of the toughest days you've ever spent in a kitchen.
With a maximum of ten people on any course, all students can expect a close level of tutoring from your chef so while you'll have to work hard to keep up you'll never be left behind.
All classes are scheduled during our normal kitchen hours, so you'll be sharing the space with our other customers as they work. Come expecting a busy kitchen!
