Just in time for summer and May Day Bank Holiday, Pit Master Malachy O'Connor of Fire & Salt Barbecue Company brings their talent and years of expertise in grilling and smoking to Cook:Manchester in a full day class which will give you everything you need to know about how to make your barbecue a success, from how to prep meat to creating rubs & sauces and how to get your grill running at the optimum temperature for the whole day.
The course runs for 6 hours from 10am to 4pm. Students are asked to arrive on site for 9:30am. Complementary morning refreshments will be served and aprons will be handed out which you are welcome to keep.
We'll have one grill per student for you to tend during your day - you'll be in charge of getting it started and keeping it at an optimum temperature throughout your lesson. You'll be given all the kit you'll need and full instruction in getting it started and keeping it running.
You'll learn how to create rubs and sauces for chicken, pork and beef from scratch and how to prepare pork shoulder, pork belly ribs, brisket and chicken thighs before cooking - including how to cut down your ribs into Spare, Baby Back or St. Louis style.
Over the course of the day you'll cook chicken thighs and pork ribs and you'll be given your own fully prepared pork shoulder and brisket ready to cook on your own Bank Holiday BBQ!
As Cook:Manchester is a working kitchen, you'll be expected to work to a chef's standards of discipline and food hygiene. A full briefing will be given before the session begins.
The Cook:Manchester Masterclass sessions are a series of cooking lessons developed with hard-working chefs from around the UK, each one centered around the experience of creating dishes around a particular set of ingredients or skills.
Each class is specifically designed to be accessible to all skill levels, but involve a level of difficulty and attention to detail that will tax even the most experienced students. Make no mistake, The Cook:Manchester Masterclass will be one of the toughest days you've ever spent in a kitchen.
With a maximum of ten people on any course, all students can expect a close level of tutoring from your chef so while you'll have to work hard to keep up you'll never be left behind.
All classes are scheduled during our normal kitchen hours, so you'll be sharing the space with our other customers as they work. Come expecting a busy kitchen!
