British Game: Cooking and Butchery

On this intensive game course, we look at why game is important in our diet. The meat that we use in B&H Kitchen is all from ethically sourced in line with the various game seasons. We will talk you through the different cuts of meat and which cooking methods are most appropriate.

On the course you will learn:

Identifying all the different game birds

Introduction to venison, wild rabbit, hare

Why is game important in our diet, seasonality of each game

Maturing and hanging of game

Ideal vegetable garnishes that accompany game dishes

On arrival for the day you will be greeted with an informal introduction from our professional chef tutors over a light breakfast of freshly baked pastries, tea and coffee. Halfway through the day students are invited to sit down for a welcome break and enjoy a complimentary lunch with refreshments while you chat with your fellow classmates.

Tickets are priced at £125.
