    The Future of Food on Tuesday 29th September, 7pm-9pm, is the last in the series of ‘Borough Talks’ which have explored relevant issues surrounding food today. This final debate also marks the end of the market’s year-long 1,000th anniversary celebrations.

    September’s talk, The Future of Food, will feature restaurateurs, professors, leaders in food innovation and trend experts questioning what we will be eating in 50 years’ time – as well as how and where we’ll be consuming food. The panel will cover wide-ranging topics from the rise of ultra-processed food to the shrinking retail environment and even alternative sources of protein.

    The debate will be led by Professor Tim Lang. A trustee of the Market and Professor of Food Policy at City University, Tim has extensive experience in examining the decision-making process that shapes the food supply chain in the developed world.

    Other panel members include:

    Sam Bompas, of Bompas and Parr. Sam and his partner Harry are responsible for some of the most innovative flavour-based experiences of recent years and are continually looking at ways to push the boundaries of culinary research, edible architectural installations and contemporary food design

    Douglas McMaster, Head Chef and Owner of SILO in Brighton, the UK’s first zero waste restaurant

    Victoria Loomes, Senior Trend Analyst, who will be able to discuss consumer trends and how they are applied in the food world

    The debate will be moderated by Joanna Blythman, award-winning investigative journalist and author of seven landmark books on food issues.

    The monthly panel events, taking place in the market’s Three Crown Square, have seen some of the most respected names in the industry – including producers, traders, journalists and activists – discussing a variety of topics that are currently driving the news agenda and creating buzz in the UK food scene.

We thought it was time to invite the public to be part of these discussions and hear from important opinion formers on these matters.”
