Join Stefania Daniele, owner of renowned Gioia di Vivere Cookery School, certified organic vegan chef, cookery teacher and food therapist, to learn how to make stunning plant-based wholegrain authentic Italian pizza.

This live interactive class will include:

  • How to make a vegan dough for authentic Italian pizza 
  • Kneading, shaping and rolling techniques
  • Learn the secrets of making delectable plant-based pizza toppings such as garlicky tofu and caramelised red onions with fresh herbs.
  • Knife skills - how to peel, chop and slice like a professional 
  • How to use ‘semi integrale’ - light whole grain - flours for deliciously healthy results
  • Healthier cookery techniques based on the macrobiotic philosophy, as well as careful use of salt and oil
  • A chance to ask Stefania questions

About Stefania

Stefania is an organic vegan chef and the owner of internationally renowned ‘Gioia di Vivere Cookery School’ a not-for-profit family organisation in Lucca, Tuscany.  Stefania’s mother Marina, a pioneer of macrobiotic philosophy and vegan cuisine in Italy, founded the cookery school in 1992 to share her passion for creating delicious vegan versions of traditional Italian recipes using fresh, organic, seasonal and local ingredients. Students visit from all over the world to learn family recipes handed down through generations and vegan cookery secrets gained from years of experience.


INGREDIENTS LIST  

      Dough:

      • 200g “00” strong bread flour
      • 200g whole wheat flour (or spelt flour)*
      • 15g fresh instant yeast (or 8g/2 teaspoons dried active yeast)
      • 1 ½ cup water
      • 1 teaspoon sea salt

      *you can also use 100% wholewheat if you wish but the rising process can be more difficult

      Toppings:

      • 200/250g firm tofu (or you can go for a red pizza only)
      • 250g tomato passata (or you can go for a white pizza adding 2 more onions or 2-3 potatoes)
      • 2-3 red onions (or 2-3 potatoes you can go for a red pizza adding: + 200g passata, + 200g tofu)
      • 6 tablespoons extra virgin olive oil (optional)
      • 4/5 basil leaves (optional)
      • 2 teaspoons oregano
      • 1 sprig rosemary (optional)
      • ½ teaspoon chili powder (or black pepper)
      • 1-2 garlic cloves
      • 2 tablespoons sea salt 
      • 1 tablespoons capers (optional)
      • 4 tablespoons soy cream (or coconut cream)
      • 2 tablespoons almond flour (or blended almonds)

    EQUIPMENT LIST


    • 1 large chef knife 
    • 1 large bowl
    • 3 medium bowls
    • 1 chopping board
    • 1 measuring cup or scales
    • 1 small pot to heat water
    • 3 teaspoons
    • 2 forks
    • 3 tablespoons
    • 1 clean kitchen towel
    • 2 dishes
    • 2 baking sheets (square or round shape)
    • 1 pastry brush (or you can use fingers instead)
    • 1 ladle or big spoon
    • 1 rolling pin (or you could  use an empty glass bottle instead)

    • 2 glasses

          • I have not received my ticket via email. What should I do?

            The first thing to do is check your spam/junk filters and inboxes. Your tickets were sent as an attachment and can be thought of as spam by some email services. Alternatively, you can always find your tickets in your Billetto account that you can access in the browsers or the dedicated Billetto app. For more help with this, read here.

          • I wish to cancel my ticket and receive a refund. What should I do?

            The approval of refunds is entirely at the event organiser’s discretion, and you should get in contact with the event organiser to discuss what options are available to you.           • I have registered on the waiting list, what happens now?

            If more tickets become available you will be notified (by email) amongst others who have joined the list. Purchasing is on a first-come first-serve basis. For more information, read here.
